Description
Rice-based glucose syrup is a sweetener produced by the hydrolysis of starch from rice. The result is a clear, syrupy liquid consisting mainly of glucose, oligosaccharides and smaller amounts of other sugars, depending on the degree of hydrolysis. Glucose syrup is widely used in the food industry because of its versatility and ability to improve the texture, flavor and shelf life of various products.
Characteristics
- Grade: Food.
- Resistant to crystallization: Rice-based glucose syrup is often used to improve texture and prevent crystallization in sugary products.
- Taste: Neutral, less sweet than sucrose.
- Composition: Contains mainly glucose, with small amounts of other sugars such as maltose and dextrins.
- Moisture content: Moisture content can vary, but is usually around 20-25%.

1. Sweetener
It is widely used as a sweetener in candy, cakes, ice cream, sauces and soft drinks because of its milder sweetness and the stability it provides.
2. Texture & Shelf Life Enhancer
It prevents crystallization in products such as fondants, caramels and other sugar products and helps at maintaining the desired texture.
3. Food & Beverages
Glucose syrup is often added to products such as cereals, sports drinks and energy bars because of its energy-delivering properties.
4. Animal Nutrition
It can also be used as an ingredient in animal feed because of its easy digestibility and energy delivery.
